I don't think salt works that fast. Anyway, he touched the meat with more than just what he used to pinch the salt.There's definitely bacteria on the grinder.

Here's a tip: put the steak in on one side of the pan. Then, when you flip, the uncooked side gets to hit fresh iron that hasn't been cooled down by the first cooked side. Helps the sear a bit (remember that sear does not lock in juices but only provides flavor).
